Vegan ~ Jean - Christian Jury
Comprehensive is the word to describe this encyclopedic work by raw food chef Jean - Christian Jury. In 2008 Jury opened his La Mano Verde restaurant in Berlin and it is with seven years assistance from his kitchen team that has made this book possible.
Vegan is in part the result of a major health event in Jury's life. After years of working long hours and eating poorly in kitchens throughout Europe, he had a heart attack. His passage to good health came through changes in lifestyle and diet, that lead him to develop a new eating concept around raw foods.
In La Mano Verde the goal was to surprise non-vegans with delicious vegan recipes, to show that meat wasn't necessary for a delicious and satisfying meal.
